Somewhere along the line, Thanksgiving turned (for many) from a gratitude-oriented celebration into an excuse to be gluttons for a day. There’s nothing wrong with enjoying a delicious—even big—meal. But with tens of millions of meals being consumed on this food-centric holiday—Americans will eat more than 46 million turkeys this November 22nd—what, how, and how much we eat is increasingly important to the health of our bodies and planet.
