Are vegetarians entitled to special options? Looks like the debate is about to get more heated. Last week, Madison, Wisconsin's Vending Oversight committee met to discuss whether to mandate a rule installing vegetarian food trucks of the future. The discussion, which was on the agenda but without a formal proposal, was part of the community’s annual review of food trucks. No decision was made, but it’s a telling sign of changes afoot. Vegetarian influence is growing throughout the country.

Here at TakePart, we thought the Wisconsin vendors could use a little inspiration, so we scoure five in major cities to find cool trucks offering up 100 percent vegetarian—and sometimes vegan—cuisine.

Frankenstand in Los Angeles, California

Like your food on the spooky side? The Frankenstand, a vegetarian food truck with plant-based cuisine, calls itself the “most exciting and thrilling food stand ever” promising the food is so frighteningly delicious, “you won’t know whether to smile or scream!” Their all-veg hot dogs have plenty of fans, with the vegan chili cheese dogs as a local favorite.

The Vegan Yacht in Austin, Texas

You won’t even notice the meat is gone when you visit Vegan Yacht. Try a ‘freeto’ pie—Tempe chili piled high with corn chips—or the mock chick’n tacos with avocado spread, sprouts and organic shredded carrot on two fresh El Milagro yellow corn tortillas. Got room for dessert? This vegan food truck offers "The Hempster" smoothie with apple juice, peach, mango, and hemp.

The Cinnamon Snail in New York City, NY and Red Bank, NJ

Cinnamon Snail has a special spot in the hearts of slow-food foodies because this vegan food trucks' menu is seasonally based. This season, get your breakfast on with a chipotle seitan burrito, made with chipotle-grilled seitan, scrambled tofu, fresh jalapenos, marinated kale, and chipotle mayonnaise. For lunch, try the ancho chile seitan burger, served with beer-simmered onions and garlic, arugula, piri piri pepper sauce, and horseradish cream on grilled herb focaccia. Psst…there’s also a fully raw menu available.

Ste. Martaen & Soul Vegetarian Vegan Food Truck in Chicago, Illinois

This vegetarian food truck in Chicago changes up the menu day to day and also incorporates different items depending on the season. Don’t let us tell you what to get—take it from an enthusiastic Yelp reviewer who eats there on a weekly basis and had this to say about Ste. Martaen & Soul Vegetarian Vegan Food Truck: “Huge fan of the BBQ pita and the Chicago Cheesesteak. The spicy bbq pita is good too as well as the bbq wings. The soul veg specials are always great.” Word has it they now offer cupcakes as well.

Sunny Vibrations Vegan Food Truck in San Francisco, California

As the “only vegan solar-powered food truck on the planet,” this vegan delight is emblematic of the Bay Area’s oh-so-progressive ways. The Sunny Vibrations Vegan Food Truck promises to satisfy “even the toughest-skinned carnivore” with their food. An online menu is hard to find, but you can get an idea of their fare from their catering menu, which features fried plantains, an Italian “sausage” on a bun, grilled shiitake avocado sushi rolls, and coconut lentil soup.
