Red quinoa and broccoli salad works well as an entree or side, by itself or over some fresh greens—and it packs a nutritional punch no matter how you serve it.
Crunchy broccoli florets are tossed together with stir-fried tofu, crisp red onions and red quinoa, then drizzled with a generous amount of almond butter and honey vinaigrette. Packed with protein and fiber, rich in nutrients, and heavy on flavor and textures, this salad is great for a palate with a penchant for health.

Not only is this dish tasty, it's also ridiculously simple to make. The longest you'll spend working with any one ingredient is the 1/2 hour or so it takes to cook the quinoa.
And, at less than $5 for the entire bowl (which easily serves 3), it's a nod to the food industry that yes, healthy can be affordable.
The end result? Vitamin-rich veggies set against a slightly nutty, deep-red bed of what the Incas called "the mother of all grains."
