Over the next few days I’m going to be posting some of my favorite vegetarian Thanksgiving recipes - because Thanksgiving should be tasty for everyone!
Most of these recipes comes from my Mom, as when I told her I was becoming a vegetarian about 7 years ago, she went online and somehow found the best vegetarian recipes ever. This one is my favorite and I can’t have Thanksgiving without it (and it’s actually vegan too!)
Vegetarian Gravy
1/2 cup vegetable oil
5 cloves garlic, minced
1/3 cup chopped onion
5 Tablespoons flour
4 Tablespoons soy sauce
2 cups vegetable broth
1/2 teaspoon sage
1/4 teaspoon ground black pepper
1/2 teaspoon salt
In a saucepan over medium-low heat, combine the oil, garlic and onion; cook until onion is translucent.  Stir in the flour and soy sauce to make a paste. Gradually whisk in the broth.  Over medium heat, bring the gravy to a boil. Season with the sage, pepper and salt. If too thin, whisk in some flour; if too thick whisk in some water.
