Veganism in Ohio, Update #1 and Photo Diary Posted by Gina Telaroli on July 21, 2008 at 9:08 am

Well it has almost been a week of me being vegan - (I officially started Tuesday afternoon last week) and I have to say I feel pretty great.

Eating good vegetables and healthy grains (along with some protein from tofu, soy etc…) is really a good way to go - I feel lighter, happier and find myself craving fatty gross (yet tasty) foods a lot less. And, if you put a little effort in, you’ll see that vegetables can really look and taste good:

*Grilled tofu sandwich with fresh greens and red pepper (in a balsamic vinegarette)

More pretty pictures and a recipe - after the jump

*Vegan veggie burger, fresh green beans in olive oil, boiled corn on the cob and honeydew/watermelon

*Fresh red pepper stuffed with brown rice, zucchini and corn and romaine salad with nectarines, walnuts and oil and vinegar

*And the grand finale! - Vegan Key Lime Pie:

takepart to make your own vegan key lime pie (it is super good!) and takepart again to get your local paper to carry DeFlocked - a new comic that promotes animal rights!

I’ll be back soon with more yummy pictures and food updates, along with some facts about how adding more veggies into your life can make you happier and healthier!
