Today’s Friday, and if you’re a regular reader of this site, you have probably come to expect a recipe from us on the last day of the week. So here it goes: Crush up a bunch of Flamin’ Hot Cheetos, stir the fire-engine red powder into some pancake batter, then dip strips of cooked bacon into the mixture and cook the pancakes on a griddle. See, you put the bacon inside the pancake. And dip it in ranch dressing spiked with Sriracha, obvs.

But wait! Where’s the essay about country living in Pennsylvania? You expect a story of foraging for wild plants, of gardening, of farmers market shopping or exploring the polyglot flavors of New York’s various ethnic enclaves in the space—all hallmarks of Ian Knauer’s weekly recipe column. Oh, and this recipe doesn’t exactly fit the rubric, although I’m sure that Ian could come up with some homespun version. Say homemade bacon dipped in chipotle-spiced buckwheat pancake batter?
