If youre anything like us running around TakePart HQ, a one pot meal is exactly what the doctor ordered for a Monday night. At the beginning of a busy week, when, um...some of us are still...um...struggling to shake off the weekends festivities, the last thing we want is a lot of fuss and mess in the kitchen.
Thats why we were so happy to come across this One Pot Kale and Quinoa Pilaf on one of our favorite food blogs, One Hungry Mama.
Now it looks like we cant credit Stacie at One Hungry Mama for creating the recipe since the powerhouse foodie site Food52 dreamt up this gem. But since were big fans of Stacie were gonna throw her the link love on this one.
As she puts it:
Lets just say that this recipe is family food gold. Its way tastier than you think itll be. Im even talking to you (three) people who think that plain steamed kale and quinoa sounds tasty. Seriously: this is Tasty with a capital T. Both of my kids gobbled it up, even the kale, which they usually find too tough.
