If you’re anything like us running around TakePart HQ, a “one pot” meal is exactly what the doctor ordered for a Monday night. At the beginning of a busy week, when, um...some of us are to shake off the weekend’s festivities, the last thing we want is a lot of fuss and mess in the kitchen.

That’s why we were so happy to come across this One Pot Kale and Quinoa Pilaf on one of our favorite food blogs, One Hungry Mama.

Now it looks like we can’t credit Stacie at One Hungry Mama for creating the recipe since the powerhouse foodie site Food52 dreamt up this gem. But since we’re big fans of Stacie we’re gonna throw her the link love on this one.

As she puts it:

Let’s just say that this recipe is family food gold. It’s way tastier than you think it’ll be. I’m even talking to you (three) people who think that plain steamed kale and quinoa sounds tasty. Seriously: this is Tasty with a capital “T.” Both of my kids gobbled it up, even the kale, which they usually find too tough.

Head on over to One Hungry Mama to get the entire recipe.

[UPDATED: Thanks to Bonnie below for pointing out that this gem landed on Food52 after her sister submitted it to the site. Check out her delicious looking blog at]

Inspired by Meatless Monday, a campaign encouraging people to cut back on meat consumption one day a week, TakePart's Meatless Monday recipes will give you every reason you need to skip the steak. By eating veggie just one day a week, you can reduce your environmental impact, expand your palate, and improve your health.
