Meatless Mondays: Zucchini Pancakes

Megan Bedard is a sucker for sustainable agriculture and a good farmers market, she likes writing about food almost as much as eating it.

It's about that time in the summer when green thumbs start to dole out their zucchinis to anyone who'll take them. Summer squashes have a habit of growing to the size of Little League baseball bats, and a person can only eat so many loaves of zucchini bread.

Thanks to veteran food blogger Stacie, aka Hungry Mama, we have one more idea for you: zucchini pancakes.

Great for breakfast, lunch, or dinner, these little guys pack a healthy dose of vitamin C and are quick to make—"These came together in a snap!" swears Stacie.

Little kids can handle them easily as finger food, and adults like 'em, too.
