Meatless on Mondays: Lemony Lentil and Rice Salad

Megan is a sucker for sustainable agriculture and a good farmers market, she likes writing about food almost as much as eating it.

Inspired by Meatless Monday, a campaign encouraging people to cut back on their meat consumption one day a week, TakePart's "Meatless on Mondays" will give you every reason you need to skip the steak. By going vegetarian one day a week, you reduce your environmental impact, expand your palate, and improve your health. Plus, going meatless is just plain kind to animals.

Just 'cause you're in the car doesn't mean you need to hit up a Carl's, Jr. off the freeway to fill your belly.

Shawna Newberry of Would Rather Gather says that one of the best things about her Lemony Lentil and Rice Salad is that it's great on the go.

"Who doesn’t love a salad that is both delicious and car-service friendly?" she asks. Answer: no one.

Plus, this salad will offer your taste buds a whole lot more than a bland roadside sammy can.

Done right—that is, keeping the dressing and pecans separate from the salad until you're ready to munch—will ensure that "the crunch of the pecans and the zing of the dressing come through loud and clear," Shawna says.

So what are you waiting for? Find the recipe here, then get chomping. Happy Meatless Monday!
